Crèmes Brûlées

Ingredients For four servings: 1½ cup of heavy whipping cream 1 tea spoon of pure vanilla extract ½ tea spoon of orange extract 4 egg yolks ¼ cup of granulated sugar ¼ cup of brown sugar Directions Bring the whipping cream, vanilla extract, and orange extract to a boil. Let it rest Beat the egg yolks with the granulated sugar Pour the whipping cream into the egg yolks and mix well Pour the custard in four individual dishes Put the individual dishes in a pan and pour water between the dishes so they barely float in the pan Cook for 30 to 40 minutes at 350F until custard is set Let rest at room temperature for four hours Sprinkle with brown sugar and broil (using the oven) for a couple of minutes Serve cold

Crêpes

Ingredients For 5 servings: 1/2 cup of milk 1/2 cup of water 1 cup of flour 2 eggs 1 pinch of salt 50g of melted butter Directions Mix all the ingredients in a bowl. Make sure to remove all lumps Warm up a pan (preferably thin). Oil the pan with either butter or olive oil. Make sure the oil the pan between each crepes Using a ladle, pour enough batter for one crepe in the pan. Let cook for approximately 40s and make sure to shake the pan so the crepe does not adhere to the pan Using a flat utensil like a spatula, flip the crepe and let it cook for another 20s or so Put the cooked crepe aside Repeat until you run out of batter

Marmalade

Ingredients About 3lb of Citrus fruits (Orange or tangerines) Sugar (same weight as peeled fruits) Directions Peel the fruits, reserve the skins after scraping them for excess pith Seeds the fruits and put seeds in muslin bag Mix resulting fruits with equal amount of sugar Boil the peels for 5 minutes Cut the peels in fine strips Slowly cook fruits, sugar, peel stips and seeds for about 1 hour and until the mix darken in colour and you obtain a thick syrup Remove seeds Can, and sterilize cans by plunging them in boiling water for 15 minutes

Oreillettes

Ingredients For 2 persons: 125g of farine 1 egg 30g of melted butter 10g of sugar 1/8 teaspoon of salt 1/4 lemon juice Directions Mix all ingredients to obtain a large ball of dough Let rest in fridge for about 1 hour Cut in small balls and spread as thin as possible on a flour dusted surface Fry in a pan with about 1/2 inch of oil. Spread on paper towels and add some powdered sugar
